White Steel 2, or shirogami ni-go  in Japanese, used for the blade of these knives, is a steel made by hitachi metal and traditionally forged by many Sakai knife makers. It's a carbon steel, which unlike stainless steels, does not contain chromium and so oxidizes more easily (find all our tips for maintaining your carbon steel knives on our blog). It is appreciated for its balance: a sharp edge, high hardness, and yet an easy sharpening

This white steel knife series 2 is forged by master craftsman Tanaka Yoshikazu and sharpened by Kawakita Ippei. The knives are light, the finishes elegant and brushed right into the corners. They are true pieces of Japanese craftsmanship and lifelong companions.
