Our selection of Japanese knives Ginsan Steel

 
 

   Ginsan, or literally 'silver-3', is the name of a steel widely used in forged Japanese knives. It is a stainless steel produced by Hitachi Steel, a Japanese steel manufacturer renowned for its high-performance steels used in cutlery and other products.
 

 

It is a high-carbon alloy, with 1% carbon (yes, 1% is a lot!) and 13% chromium, which gives it its resistance to oxidation. The steel's hardness is between 59 and 62 HRC. Along with VG10 steel, Ginsan steel is the most commonly used stainless steel in traditional Japanese knives.
